The preparation method of soy beans is as follows:
Tools/Materials: 200 grams of soybeans, 3 grams of edible alkali, 350 grams of edible oil, 1 pound of red pepper, 300 grams of sweet noodle sauce, 10 grams Edible salt, 20 grams of white sugar, 2 bottles of high-strength liquor, and appropriate amounts of various spices.
1. Prepare 200 grams of soybeans, remove the bad beans inside, wash them clean, add water that has not covered the soybeans, and soak them overnight. The next day, put the soaked soybeans into a sieve and rinse them with clean water several times.
2. Then put the soybeans into the pot. When cooking the soybeans, be sure to add a little more water, and then add 3 grams of edible alkali, so that the soybeans can be cooked soft and rotten quickly. Finally, close the lid and bring it to a boil.
3. After the water boils, we turn to low heat, and then use a spoon to skim off the white foam floating on it. It is best not to leave during the period of skimming after boiling to prevent it from overflowing. Boil the soybeans until the water in the pot is almost gone. Gently crush them with your hands to indicate that the soybeans are cooked. Then remove the water and put it into a sieve to spread it out with chopsticks to dry out some of the water on it.
4. Next we prepare 1 and a half kilograms of red peppers. For red peppers, it is best to choose string peppers with relatively low water content, so that we can easily dry out the water when cooking beans. Not easy to bad beans. After washing it, put it aside to dry. After the peppers are dry, remove the stems and chop them into small pieces. If you like it extra spicy, you can add a handful of millet.
5. Next we prepare some spices, bay leaves, cumin, cinnamon, star anise, and then prepare a small piece of old ginger, a head of garlic, and a green onion.
6. Add 350 grams of cooking oil to the pot, then put the prepared spices in, turn on low heat and fry the aroma of the spices until brown as shown in the picture below, then use a slotted spoon to fry the spices. Take it out and throw it away. The soy beans made in this way are fragrant and flavorful.
7. Next, we put the dried soybeans into the oil pan and the chopped chilies. Start simmering the beans over medium-low heat. Stir constantly during the simmering process. During the slow simmering process, the water in the peppers and beans will continue to boil out. Let it cook until the water inside evaporates and only the translucent oil remains.
8. Then we put in 300 grams of sweet noodle sauce, which is salty. Be sure not to skip this step of adding sweetened flour sauce. Stir evenly with a spatula and simmer for 10 minutes. After 10 minutes, add 50 grams of edible salt and 20 grams of white sugar and simmer for another 10 minutes. The clearer the water in the pot evaporates, the longer the soy beans will last. Finally, we add 2 bottles of high-strength white wine, simmer for another 5 minutes, and then turn off the heat.
