2. Method/Step: Wash the beef, cut it into pieces, put it in a pot with cold water, add cooking wine, ginger and onion, boil it, take it out and rinse it with cold water, then drain the water.
3. Peel potatoes and carrots, wash them and cut them into hob blocks for later use.
4. Add hot oil to the pot. When the oil is hot, add ginger slices, dried peppers and prickly ash. After frying, add beef and stir fry for a few minutes.
5, add water to the pot, (more water to avoid boiling), then add green onions, star anise, cinnamon, fragrant leaves, soy sauce, turn off the fire after the fire is boiled, stew for about 1 hour.
6. After the beef is stewed for an hour, add potatoes and carrots, turn it over and continue to stew for about half an hour, and the beef will be stewed.
