Fu Ping persimmon is a specialty in Fuping County, Shaanxi Province. Its raw material is the famous persimmon variety "Fupingjian persimmon" produced in Fuping County. In 2008, the former General Administration of Quality Supervision, Inspection and Quarantine approved the protection of geographical indication products for "Fu Ping persimmon".
Production method:
(1)1Around the end of October, ripe persimmons will be harvested, and persimmons with neat shapes, not yet completely softened, free from pests and diseases and mechanical damage will be selected.
(2) Remove the skin of persimmon, and the peel residue around the pedicel should not exceed 1cm.
(3) naturally insolate the persimmons for about 2-3 days, then cover the persimmons with tarpaulins and air dry naturally. In the drying process, it is required to be more than 50cm away from the ground.
(4) After airing for about 7 days, the surface of the persimmon is white and the pulp is slightly soft. At this time, gently knead the persimmon by hand and squeeze the pulp to promote persimmon softening.
(5) When the persimmon is completely softened, without hard core, and the water content is lower than 35%, cut off the fruit stalk and take it off the shelf.
(6) Put the persimmon into a container, cover it and put it in a cool environment. After 4-5 days, wait until the persimmon is soft, and then put the persimmon in a cool and ventilated place for frosting.
(7) The well-frosted persimmon should be stored at normal temperature or under cold storage. The warehouse should be clean, tidy, dry and ventilated, and the temperature should be below 10℃.
