Take a piece of yellow croaker, make a few cuts on both sides of the fish, and chop the onion, ginger and garlic into small pieces.
Sprinkle a little salt on top of the fish.
Heat the pot, pour in the oil, and spread the oil evenly.
Turn the heat to low, put the fish into the pot, use a spatula to gently flip it over and fry it on both sides.
Pour soy sauce, cooking wine, vinegar, thirteen spices, and chicken essence evenly over the fish. Add a bowl of water. Cover the pot. Please check it in the meantime. Turning over with a shovel.
Finally, drain the fish.
