There are two kinds of barbecue methods of Dai nationality in Xishuangbanna, namely, parallel roasting and parallel roasting, which can obtain two kinds of food with different colors, smells and tastes.
(1) "Bing" is a clean baking method that uses soy sauce, salt, pepper oil, star anise powder and lard as seasonings without adding any ingredients.
(2) In the "nest-in-nest" baking method, more ingredients need to be added into the main material, and the main material is used to wrap the ingredients for baking, so that the baked food can fully absorb the flavor of the ingredients.
Method of making Dai flavor:
The method of making Dai flavor is similar to that of China, mainly including roasting, steaming, chopping, pickling, boiling and frying, with more than 12 kinds, among which the dishes cooked with pork as the main material by the method of "roasting shredded meat, steaming minced meat and roasting sour meat" are sweet, delicious and unique in flavor;
The dishes cooked with beef as the main ingredient by the method of "drying bast and chopping meat" are unique. With chicken as the main ingredient, the dishes cooked by the method of "steaming, cold salad and broken roasting" are delicious;
With fish as the main ingredient, the dishes cooked by the method of "steaming fish fillets and roasting fish fillets" have soft meat, strong flavor and more beautiful taste.
Dai flavor is the diet of the Dai people, which is unique and full of characteristics. The Dai flavor, known for its sour taste, has become a wonderful flower in the diet culture of the Dai people. For example, pickled vegetables, pickled bamboo shoots, pickled fish, pickled meat, boiled beef with sour papaya, boiled chicken with sour bamboo shoots, pickled vegetables with broken juice, etc. are all distinctive sauerkraut series in Dai flavor.
