1. In Dongping Town, Zhenghe County, when a banquet is held on holidays, the first dish on the wine table is a small arm, which has the saying that "everything is impossible without a small arm". The main raw materials for making small bones are fat meat, cassava flour, sugar, tofu, eggs or duck eggs. Eggs are used to make pancakes for skin, and the other four are mixed together to make stuffing. It is orange and bright through the small arm of the egg spread into a leather bag.
2. The production process of the small arm is very particular. Stuffing. Stuffing is the key. Chop the fat meat into meat paste, mash the tofu, and mix it with cassava powder and a little sugar in a large pot and mix well for later use.
3. Make an egg skin. Beat the eggs in a small pot, add a proper amount of water and alkali, and beat them evenly with chopsticks. When the pot is seven minutes hot, moisten the pot with meat oil and pour the beaten egg liquid back and forth in the pot to form a round egg skin that is even and thin. After taking out the pot, spread the egg skin flat.
4. It's a parcel. Take a semi-circular bamboo tube about 3 cm long, sprinkle with appropriate amount of starch, attach the egg skin to the bamboo tube, put the meat into the bamboo tube, wrap the egg skin, and the small arm is formed.
5. The last step is steaming. Put the wrapped small arms in a steamer and steam them for an hour. When they are mature, the small arms are bright in color and attractive in fragrance. Cut into pieces and put them on a plate, golden and transparent.
6. Cut the steamed small arm into small sections.
