Speaking of this snack, there is still a period of history. According to legend, a long time ago, there was a dentist named Shi in Mianhu, and his two sons were selling peanuts. Once, the two brothers bought seventeen loads of peanuts and soaked them in the pool together. Unexpectedly, it rained heavily for more than 20 days in a row, and the shells of seventeen loads of peanuts were all black and almost useless. Mr. Shi suddenly thought of a way to peel off the shells of peanuts, wash the beans, and then infiltrate some edible drugs before frying. Although the peanut film turned black after frying, the peanut kernel was whiter, looser and more fragrant than before, so Mr. Shi named it "black film bean kernel".
"Black-faced bean kernel" (a kind of cooked peanut with black skin, which is called "black-faced bean kernel" in our local dialect) is a specialty of our hometown Mianhu, which is characterized by looseness, fragrance and crispness. Why is its membrane black? This has to start from more than 80 years ago.
According to legend, more than 80 years ago, there was a doctor named Shi Haoyu in Mianhu. Both his sons are in the peanut business. At that time, peanut processing was very easy. Just put peanuts in a small pond in the yard for a few days, then take them out and dry them, without opening the shell. On one occasion, Shi Haoyu's two sons put several loads of peanuts in the pool to soak. Who knows, it has been raining for more than 20 days in a row, and the peanuts are going rotten. Seeing that more than twenty loads of peanuts were about to be destroyed, Shi Haoyu used his quick wits to put alum (a medicine) into the water, then opened the peanut shell and soaked it for a few days. A few days later, Shi Haoyu dried the shelled peanuts and found that the skin of the peanuts turned black. So, with curiosity, he ate peanuts. "It's delicious!" Shi Haoyu said loudly. Shi Haoyu immediately asked his two sons to sell the new peanuts. As soon as we arrived at the market, everyone tasted it and it tasted better than the original. Everyone is scrambling to buy. In less than half a day, peanuts were sold out. Later, Shi Haoyu called this kind of peanut "black film bean kernel". This legend has been passed down to this day.
The traditional production method is to shell the purchased high-quality peanuts, select large and high-quality bean kernels, dissolve alum in a bull's head tripod (pig iron) filled with appropriate amount of water, add salt to boil at the ratio of about 50 kg of bean kernels to 2.5 kg of salt, then pour the bean kernels into the tripod and stir them evenly until the film of the bean kernels becomes discolored, and then take them out and dry them. Stir-fry the fine sand with a tripod, pour in the dried beans and stir-fry until cooked. After the production process is completed, the bean kernel film is black and bright with charming color. When you gently rub off the film with two fingers, light yellow, loose and crispy nuts will be exposed, which is mouth watering.
