Cake flour does not need to be fermented.
Flour will not ferment, only dough will ferment. Flour is used to make cakes, so do not ferment.
Ingredients: 50 grams of flour, 5 grams of baking powder, 4 eggs, 60 ml of milk, 80 grams of sugar, a little oil, fruit ingredients (raisins and walnut kernels).
Steps: 1. Separate egg whites and egg yolks.
Add 40 grams of sugar to the egg yolk milk and a little oil, mix well.
2. Mix flour and baking powder, sift 3-4 times with a sieve (no less in this step) and pour into the egg yolks.
3. Beat the egg whites and keep the temperature at 30-40 degrees (can be placed in a hot water basin). Add 5-6 drops of white vinegar (to relieve the fishy smell and make foaming) and beat with an egg beater until foaming (add sugar in two batches).
The standard for foaming is that the egg liquid cannot be soaked when stirred up.
4. Pour the egg whites into the egg yolks twice and mix gently.
5. Grease a microwave container with oil and pour in the mixed paste (just pour 2/3).
Sprinkle with fruit.
Cook on high heat for 5-6 minutes.
Note: All utensils used to beat egg whites should not be stained with oil. It is best to scald them with boiling water, otherwise they will not foam.
