Zhu Sheng noodles, made of duck eggs and flour, are a special snack in Guangzhou, Guangdong Province, and belong to Cantonese cuisine. Because the pronunciation of "Ji" is unlucky, it was renamed "Sheng". Zhu Sheng noodle is a kind of pasta with noodles and wonton skin, which is kneaded by traditional methods and pressed by bamboo (bamboo pole with big hair).
As early as the Republic of China, Zhu Sheng noodles were popular in Xiguan area. In 1950s and 1960s, a bowl of Zhu Sheng noodles was once a delicacy of Guangzhou people. Since the late 1950s, after the mechanization of noodle technology, the production technology of bamboo noodles has changed from handmade noodles to machine-made noodles, calendering and slicing, and has continued to this day. In the second episode of China on the Tip of the Tongue, an old-fashioned traditional noodle won a place for Nanpai pasta.
Laoxiguan is the collective name of the old Guangzhou people in Ming and Qing Dynasties for the area outside the west gate (now Liwan District), starting from Jinlong Road and 623 Road in the north, reaching Ersha Island and Long Beach in the Pearl River in the south, Renmin Road in the east and Liwanyong and Pantang in the west. In fact, from an accurate geographical point of view, today's old Xiguan is roughly composed of three parts: Jinlong Road Central Belt, Shangxiajiufu Central Belt and Litchi Bay Pantang Central Belt. These three places now belong to Liwan District.
The most attractive snacks in Laoxiguan are all kinds of flavor snacks made by Xiguan folk traditional crafts. Products include porridge, noodles, cakes and desserts, among which the most famous is the old four snacks in Xiguan: porridge from Wu, noodles from Europe, double-skin milk from Nanxin and ice cream from Shunji.
In addition, Chentian Chicken Shuang Fish Skin, Xiguan Lao Seto Powder, Yin Ji Bula Sausage, Chaozhou Fish Dan Powder and Shunde Chencun Powder are also popular font names among local people. Salted pancakes, fried dough sticks, fried piles, boat porridge, radish cakes, water chestnut cakes, spring rolls, fried snails, beef offal and beef soup all belong to the category of "Xiguan snacks".
