2. Leave a little oil in the pot, add tofu cut into small pieces and a little water, boil over high fire, adjust the taste, add crab powder, stir well, and thicken the water starch. Sprinkle white pepper and coriander powder when filling the pot.
Third, fried crab yellow oil
Ingredients: crab oil, 4 egg whites, refined white flour, shallots, refined salt, spicy soy sauce, white pepper powder and starch.
Exercise:
1. First, add a small amount of refined salt, spicy soy sauce, white pepper and starch into crab oil, mix well, divide it into 10 parts, and knead it into 10 balls by hand.
2. Beat the egg white with chopsticks until the chopsticks are inserted upright, slowly mix in the flour and stir evenly to form an egg white paste.
3. Heat the pan, add 250 grams of cooked lard, and when the oil temperature rises to 60% to 70%, hang the crab oil balls into the egg white paste, fry them one by one until they change color, and take them out.
4. After all the crab oil balls are fried, fry them in the oil pan.

Four, crab roe seafood soup
Ingredients: crab oil, shrimp, squid, sea cucumber, small yellow croaker, 1 egg, carrot, coriander, starch, ginger, fresh soup, cooking wine, salt, white pepper and monosodium glutamate.

4. After reopening, add crab oil and cooking wine to adjust the taste. Finally, slowly pour the egg starch solution into the thicken and sprinkle with pepper and coriander powder.
Five, crab yellow fish belly
Ingredients: fish maw with water, crab roe, onion, ginger, soy sauce, refined salt, monosodium glutamate, sugar, starch, cooked lard, etc.

1. First, cut the prepared fish belly into strips 5 cm wide and 2 cm wide, blanch it in a boiling water pot, and drain the water.
2. Heat the wok, add 50g cooked lard, add 75g crab roe and Jiang Mo 1g and stir-fry until the crab roe overflows, then add 25ml g wine and 2ml vinegar, and add broth, soy sauce and white sugar and stir-fry for a while.
3. Add 20g cooked lard to the original pot, stir-fry shallots, add 5ml ginger juice and 250ml clear soup, remove the shallots, add fish maw and half fried crab oil, and then add cooking wine, soy sauce, white sugar and refined salt.
4. Bring it to a boil. After cooking, add monosodium glutamate and water starch to thicken, drizzle with cooked lard, and finally add the other half of crab oil and chopped green onion and stir-fry slightly.
