1. In Dongping Town, Zhenghe County, when banquets are held during festivals, the indispensable first dish on the banquet table is xiaozi. There is a saying that "there is no banquet without xiaozi".
The main raw materials for making Xiao Tie are fatty pork, tapioca flour, sugar, tofu, eggs or duck eggs. The eggs are used to bake into pancakes and make the skin, and the other four ingredients are mixed together to make the filling.
Only when the egg is spread out into the small arms of the leather bag does it look orange and bright.
2. The production process of Xiaoji is very particular.
Make stuffing.
Making the stuffing is the key. Chop the fat meat into a meat sauce, mash the tofu, mix the tapioca flour and a small amount of sugar in a large basin and mix well. Set aside.
3. Make egg skin.
Beat the eggs in a small basin, add an appropriate amount of water and alkali, and beat them evenly with chopsticks. When the pot is about 70% hot, moisten the pot with meat oil. Pour the beaten egg liquid back and forth in the pot to form a round egg skin.
Evenly and thinly, spread the egg skin flat after taking it out of the pan.
4. It’s a package.
Take a semicircular bamboo tube about 30 centimeters long, sprinkle with appropriate amount of water starch, attach the egg skin to the bamboo tube, put the meat filling into the bamboo tube, wrap the egg skin, and the little arm is formed.
5. The last step is steaming.
Put the wrapped ham into a steamer and steam it over high heat for an hour. When the ham comes out of the steamer, it will be bright in color and have an attractive aroma.
Cut into slices and place on a plate, golden and translucent.
6. Cut the steamed ham into small sections.
