Michelin is a French authoritative appraisal agency with a long history, which specializes in commenting on the catering industry. 1900, the founder of Michelin Tire published a guide for tourists to choose restaurants during their travels, namely Michelin Red Series. Since then, the Michelin red series, which is renovated every year, has been regarded as a treasure by "gourmets" and known as the European gourmet Bible. Later, it began to evaluate the star rating of French restaurants every year. Michelin stars are judged by a group of screened "food spies", who are called "inspectors". Every time an inspector goes to a restaurant or hotel to make a judgment, he needs to hide his identity, sneak into accommodation and taste. The scoring items they need to refer to include food (60%), dining environment (20%), service (10%) and wine matching (10%).
