150g refined flour. 50g egg yolk, 20g peanut oil 150g sugar and 4g essence.

1. Stir the refined flour with boiling water into a thick paste, and stir it evenly when it is cooled to 50℃. Stir the egg yolk evenly;
2. Make balls with a diameter of 6 cm, fry them in 60% hot oil (about 150℃) until they float upright, and take them out.
3. Burn the oil to 80% heat (about 200℃), put it in meatballs and fry it again. Remove the oil when the empty meatballs are golden yellow.
4. Add sesame oil to the wok and heat it to 40% (about 100℃), then add sugar.
5. Stir-fry over low heat until bubbling, pour the meatballs, turn them over from the fire, drop the essence, pour them into cold dishes, spread them out with chopsticks to cool, and then put them in a conical dish.
