Dehydration treatment
After cleaning the pig liver, slice it with a blade and soak it in cold water for about 15 minutes, so that some blood in the pig liver can be soaked. Time is up. Take the pig liver out of the water and control the water. Put a proper amount of water into the pot, and after the water boils, put the pickled pig liver into the water. It doesn't take long to blanch. If the blanching time is too long, the pork liver tastes very old. Blanching for 20-30 seconds is enough, and then take out the pig liver for later use.
Pickling treatment
Chopped pork liver will smell a little fishy if boiled directly, so we need to marinate it a little, and add onion, ginger slices, 15 ml cooking wine and 2 g salt to the pork liver. Stir the pork liver evenly by hand and set aside for pickling 10 minute.
Cooking treatment
Pour 30 ml of sesame oil (sesame oil) into the pot, heat the oil in a small hot pot, then add ginger slices and stir-fry until fragrant. Then pour in the cooked pork liver and stir well. Stir-fry until fragrant, then pour 50 grams of fermented grains and stir well. Add wine and stew for a while.
skill
Don't cook pork liver in the pot for too long. If cooked for too long, the taste will get old.
