First, soak the mushrooms: cut off the stalks of mushrooms, soak them in cold water for 4-5 hours, change the water twice in the middle, and wash the mushrooms properly.
Step 2, put oil in a hot pan, saute the chopped red onion, add the soaked and cut mushrooms, and stir-fry until the fragrance appears (the mushrooms treated in this way are more fragrant, just like my grandmother said).
3. Take a deep pot and spread a layer of pigskin under it (to prevent mushrooms from sticking to the bottom).
4. Put the fried mushrooms, chicken feet, leftover pigskin, ribs and chopped green onion into the pot in turn, add chicken oil and water (don't touch the surface of the ingredients). After boiling, add seasonings: 2 tablespoons soy sauce, 1 spoon oyster sauce, and half a spoonful of soy sauce. Finally, mix the salt together.
5. After the fire boils, cover the pot and turn to low heat. Simmer for about 3 hours. Stew until the chicken feet, the pigskin is crisp and rotten, and the mushrooms are delicious.
