A must-buy list for beginners in baking
When I first started baking, like many people, I really didn’t know where to start when faced with a dazzling array of equipment. More often than not, they can't resist the temptation and move all of them back home. The result is that there is a bunch of furniture in the house that is completely useless and just takes up space.
So I decided to write this article, a must-buy list for beginners in baking based on my many years of painful lessons. Provided for everyone's reference.
1. Electric oven for baking: This refers to the electric oven for home baking. Compared with European and American countries, it has almost become a basic kitchen equipment. It is as big as a washing machine. This kind of oven is as "big as a microwave oven". "In fact, it can only be called a small oven. But it’s not a “Toast Oven” that can only bake toast, pizza, and sausage.
An electric oven for home baking is never as useful as a large oven. Because of its small size and unstable temperature, the temperature often drops by at least ten degrees when the door is opened, so at least the following conditions must be met:
Temperature control function This is a family-style electric baking oven and a small oven ( The biggest difference between a Toast Oven and a Toast Oven is why a small oven cannot be used to make Western-style pastries. It cannot maintain a certain temperature. The temperature keeps rising over time, so it can only be used to reheat food for a short time.
The temperature can be controlled between 30 and 250 degrees Celsius. Many manufacturers also advertise that it can be as high as 250 degrees, but they start from 70 degrees. Little do they know that if there is a low temperature of 30 degrees, it can also be used as a fermentation box. .
Three stages of fire control (1) Only the upper fire is turned on, (2) Only the lower fire is turned on, (3) The upper fire and the lower fire are turned on simultaneously. This is not hard to find, but you still have to be careful. Some ovens claim to have three-stage fire control, but in fact they only have upper and lower fires on at the same time. What is the third stage? The heat is all off @_@
The dazzling wind function helps distribute the temperature evenly, especially for small ovens. I thought this was very important before, but later I found out that it was not. When it comes to pastry making, it would be better if there is no ostentatious style. Dazzling wind will cause constant airflow in the furnace, which is not a good thing. Xuanfeng is more suitable for making roast chicken, barbecue and other dishes. Therefore, it is best to have a switch with a fan function. Perhaps you can turn the fan on during preheating and turn it off when you start baking.
Automatic degreasing function This will definitely be a good helper for lazy people!
The capacity needs to be large, at least 20 liters. Isn’t that too greedy?! Hehe.
The grill is divided into three levels: upper, middle and lower, so that different foods can be baked in different positions.
There must be lighting inside so that you can keep an eye on the conditions inside while baking.
It is best to provide baking sheets and handles, not just grills.
It is best if the heating tube is not U-shaped. The one I am using now is, very annoying! When baking a cake, it must start rising from the left. The left side of the baked product must be higher than the right! But later I found a corresponding solution. I suddenly thought of it when I was baking apple cake: put one strip straight on the right and the other horizontally on the left. The left strip will not have the phenomenon that the left side is higher than the right side, because the character "ㄈ" The edge of the shape is right in the middle of this one! Unlike before when the two pieces were placed straight, the left side of the left piece was just under the "ㄈ"-shaped side, so the left side was higher than the right side!
2. Electric egg beater: Just buy one made in Taiwan for 700 to 800 yuan. This affordable egg beater can even be used both handheld and standing on the table. As long as the egg beater can beat, you really don’t need to spend a lot of money to buy high-end brand-name products. If you really want to invest money in this, I think it is better to invest in a good oven. It costs a lot to buy a brand-name electric egg beater in Taiwan, and the oven has a greater impact on the success or failure of the finished product than the egg beater. If you have a pocket Mac, of course it's a different story.
3. Spiral egg beater: Some people may wonder, why buy this when you have already bought an electric egg beater? Because many pastries often require beating more than one ingredient, you can of course wash and dry the egg beater quickly after beating one item, and then beat another item. But this is not only troublesome, but it is best not to leave some materials for too long after laying them out, so it may cause confusion for novices. This stuff is cheap and definitely worth investing in one. Especially when making any work that requires whipped egg whites such as chiffon cakes, you will appreciate the wonderful use of this stuff. Because it is spiral-shaped, it has a spring effect. When you hit it, it will automatically bounce several times, and you can beat the egg whites in a few or two times! It is definitely more practical than the classic French straight egg beater.
4. Rubber knife: This will definitely be used when mixing in powdered ingredients and beaten meringue. Although you can use a rice spoon instead if you don't have it, but since it's cheap, don't skimp on it.
5. Pastry measuring cup and measuring spoon: If you really want to save money, you can even omit the measuring spoon. Chinese soup spoon = 1 tablespoon (1 tablespoon); coffee small spoon = 1 small / teaspoon (1 teaspoon). In addition to the most basic measuring cups that are roughly divided into three scales: 1/4, 1/2, and 3/4, which are must-buys, there are also measuring cups with the capacity (CC number) marked, and even the weights of different materials (sugar, flour) marked. , water...the scale to which 200 grams should be loaded is clear at a glance). If you have enough budget, you can buy these two more.
6. Cup or sieve for sifting flour: It’s okay not to buy one for now. Although many people emphasize that it is best to sift powdered materials before adding them, the difference is not big if not sifted, but because it is not expensive...so you can measure it yourself.
7. Scale: Electronic scales are much more accurate than spring scales, and the unit price is not high. For this, I recommend buying the best one... buy an electronic scale.
8. Oven Thermometer: I have mentioned this Oven Thermometer many times. It is especially useful for small oven users. Because small ovens are small in size, the temperature is very unstable. Sometimes the temperature changes when the door is opened. It has dropped a lot!!! Also, the small oven often does not reach the temperature it should be (you turn it to 180 degrees, but it only reaches 160 degrees, etc.), so you need to use an oven thermometer to know the actual temperature. To use it, just put it in the oven and watch the temperature display through the glass door. I can’t remember where I bought my oven thermometer, but I can see it in many baking material stores. The ones I often go to are Mommy’s stores on Dingqiao and Shida Road near my home. If the store you go to doesn't have it, you can probably ask them to buy it for you. I haven't researched the brand yet, it should be similar.
9. Baking pan: Don’t waste money on non-stick pans, because firstly, the non-stick effect is not as magical as imagined, and secondly, it is very easy to make it non-stick. Just apply a thin layer of oil before baking and sprinkle some flour. Thirdly, because of the non-stick material, it gets in the way when storing, scrubbing, and cutting the finished product. Moreover, the non-stick material is easy to rot after a while. If it rusts, your money will go down the drain...so just buy the cheapest white iron.
10. Insulated gloves: protect your hands.
11. Kraft paper or aluminum platinum paper: Used when the color of the finished product has reached the desired level but the baking time has not yet expired. Cover the finished product to prevent the color from continuing to deepen. But I only use it when baking pie (see me and my apple pie for details). I don’t do this for cakes. I only need to turn off the heat (you know why there are separate controls for the upper and lower heat) , because try not to open the oven door to avoid lowering the temperature and affecting the production results.
12. A good knife: used to cut the finished product you have worked so hard to make beautifully. A serrated knife is a good choice, not only for cutting pastries, but also for cutting sushi.
Finally, if you want to make a pie, add a pin (I like the kind that rolls in the middle) and a butter cutter (useful for mixing flour and grease when making pie crust) Awesome). If you want to make bread, you have to add a dough cutter.
As for others, such as cream squeezing device, cream squeezing bag, egg separator, cream spatula for cake decoration, cake cutting triangle knife, pizza dividing roller knife, rotating cake decoration stand... Yes, I bought all of them and only used them once or twice, or even never used them before being relegated to the sidelines and left unused for a long time.
To buy or not to buy? Decide for yourself^_^
I didn’t post specific methods for you. I looked for websites with detailed pictures and texts of how to do it, because I think it’s more intuitive to learn this way, and they are all so cute~ ~~
