My girlfriend can’t live without red dates, so I learned to cook them for her.
1. For red date cake, prepare red dates, milk, glutinous rice flour. The red dates are mainly sweet and the glutinous rice flour is mainly chewy. The proportion is not limited. Add milk in small amounts and multiple times until it can be stirred into a dough.
The drier the glutinous rice balls are, the chewier they will be when steamed. On the contrary, the softer the glutinous rice balls will be after being steamed and kneaded into long strips.
The four sides can be manually shaped, divided into even portions, and placed on the plate. Boil water and steam for about 20 minutes. The specific time is adjusted appropriately according to the heat and the size of the glutinous rice balls.
2. Soak sweet-scented osmanthus, dates, glutinous rice and dates in water for 30 minutes in advance. Use a straw to take out the core and then cut it. Add 80 grams of glutinous rice flour to 60 grams of warm water and knead into a ball. Add the glutinous rice to the red dates and steam for ten minutes before eating.
3. Yam and Red Date Cake: 200 grams of red dates and 350 grams of yam. Steam the yam and mash it into a puree. Add flour 1:1 and knead it into a dough. Steam the red dates, remove the core and pound it into a puree. Take an appropriate amount of dough, wrap it with red dates, wrap it in a round shape and press it.
Shape into cake shape, sprinkle with sesame oil, heat pan and fry until both sides are golden brown.
4. Red dates, peanut slices, fried black and white sesame seeds, peeled peanuts, cored and chopped red dates, a small amount of sugar, add a stupid egg, stir evenly, and spread into the shape you like.
Set the air fryer to 180 degrees and bake for eight minutes, flip over and bake for another five minutes.
