Yellow croaker, also known as white croaker, is a traditional famous dish with good color and flavor, belonging to Zhejiang cuisine. Zhoushan yellow croaker is white, round, fresh and salty after fine processing, which is the most distinctive food used by Dinghai people in Zhejiang Province to entertain guests.
Pseudosciaena crocea was once one of the important economic fish in China and was endemic to China. It is widely distributed in the north to the south of the Yellow Sea, passing through the East China Sea and the Taiwan Province Strait, and south to the east of Leizhou Peninsula in the South China Sea. The fish is a group migratory fish in warm temperate zone, and often inhabits the middle and lower waters within 60 meters offshore. The breeding season of large yellow croaker is spring and autumn. During the breeding period, fish migrate from the wintering area in the open sea to the offshore in batches. As a precious economic fish, Pseudosciaena crocea has been favored by consumers for a long time. However, due to overfishing, resources have been seriously damaged.
