Are you from Yunnan?

If so, there is no one who doesn’t know.

It is very famous in Yunnan.

In fact, it is a snack made of rice.

Tengchong bait silk was invented by people from Hujiawan Village, Dongshan Township.

It is made from local specialty pulp rice and has a history of nearly 400 years. It is a convenient snack widely loved by locals and foreign guests in Tengchong. Baisi is generally eaten in two ways: boiled and stir-fried.

The method of cooking and eating is to cut the bait into thin strips.

Boil it in boiling water, add fresh shredded pork or ham, broth or chicken soup, and serve with soy sauce, chopped green onion, coriander and a little sauerkraut.

The stir-fried method is to roll and cut the bait into slices, mix with fresh meat slices, eggs, mushrooms, tomatoes, pea tips or cabbage and other seasonings, and stir-fry in hot oil.

This way of frying and eating is called "fried bait cubes", and Tengchong people also call it "big rescue".

According to legend, at the end of the Ming Dynasty and the beginning of the Qing Dynasty, Emperor Yongli of the Southern Ming Dynasty fled to Teng.

When he was exhausted, hungry and cold, he had to eat Tengchong fried bait cubes. It was like eating delicacies from the mountains and seas. He blurted out: "What a great rescue!".

This is where the name "Great Rescue" comes from.

Nowadays, Tengchong bait silk, a famous local food, has already left Gaoligong Mountain and settled in Chuncheng, Beijing and many major cities, and is favored by diners.

Its new generation product - "Yunteng Fast Food Silk" won the title of "Yunnan Province Consumer Favorite Product" and "Excellent Product of the Third China Township Enterprise Export Commodity Exhibition" in 1994, 1995 and 1997 respectively.
