When the water is boiled in a big fire, the lard will be milky white and pieces of oil will appear on the water. After the water is boiled dry, the grease is slowly forced out, and the lard gradually becomes more and more, turning to a small fire. When the lard has not increased significantly and the oil residue is golden and crisp, the lard will be cooked.
