Xiaozuo dried squid is a specialty of Xiaozuo Town, Hui 'an County. Dried squid in Huian is a well-known specialty seafood in southern Fujian, which is deeply loved by everyone.
The dried small squid is the most famous in the whole province. Every year, April to August is the season of "squeezing squid" in the lunar calendar, and May and June are the peak seasons. Fishermen split the first-class squid caught (commonly known as "lock roll", scientific name squid), put them in a string and hang them, and then dried them to make dried squid. Dried squid is easy to store and the shelf life can reach one or two years, so it can be tasted all the year round in Otaku, which is a special flavor of Otaku.
Dried squid not only tastes delicious, but also has rich nutritional value. A dish of "squid vegetable head (white radish) soup" is the first choice for the banquet. This soup is also very simple: cut the dried squid into strips along the texture and put the prepared white radish shreds into clear water, burn them slowly with slow fire, and then add a trace of monosodium glutamate and salt when the water boils, so that they can be filled out of the pot. This soup is not only delicious but also has the effect of sobering up and refreshing.
Squid is a neutral food, which is neither hot nor cool. It is suitable to be eaten with other foods, such as red shavings and lean pork stew, whether it is elderly people, babies in infancy or women in the "month". If the first-class squid mother is stewed with red shavings, it will have the effect of caring skin and nourishing women within a month. Dried squid is also a good seasoning for stewing soup.
