How to make Fuding pork slices?
Take the meat. It is to remove the fat from the meat you just bought, leaving only the fine meat. Then cut the fine product into small strips or pieces and make it into meat sauce.
Rub the meat. Place the meat sauce on the chopping board and rub it vigorously with the wrists of your left and right hands for about ten minutes. Mix a small amount of water with baking soda and add to the meat sauce (you can leave it out to increase the tenderness, the amount is similar to salt, too much will make it bitter), and then continue to rub until the meat sauce is sticky and can stick to your hands naturally.
Mix. Add a certain proportion of starch into the kneaded meat and continue kneading until the starch is completely mixed with the meat. When the surface is smooth and no pinkish white is visible, the meat slices are completed.
Prepare materials. Put appropriate amount of salt, pepper, shredded seaweed, some shredded ginger and coriander in a large bowl, set aside for later use
Cook the meat. First add some shredded ginger to the water and boil it. The water must be boiling so that the meat slices will still be very clear, otherwise the meat slices soup will be turbid. Use your index finger and thumb to break the meat slices into small pieces and put them into the boiling water (you can also use an iron spoon to scrape them like shrimp sliders in hot pot), cover them for two or three minutes, and you can see all the meat slices in the water. Once they all float, take them out and put them into a large bowl.
