Method 1
Cut the eggplant into diagonal pieces, soak it in water for a few minutes, take out a little and drain it, add oil to the pot (the amount is about the same as usual for stir-frying), and add minced garlic Fry until fragrant, add eggplant, stir-fry a few times, add light soy sauce, simmer over low heat for a few more minutes, add fried shredded pork, pepper and a little MSG.

Main ingredients: eggplant, lean pork, red pepper, green pepper

1. Wash the eggplant and cut into shreds.
2. Cut the lean pork into shreds, mix well with salt, meat tenderizer, and starch, and marinate.

4. Put oil in the pot and heat it 50%.
