Baoning vinegar, produced in Langzhong city, is a famous and special product with a long history, which was founded in the late Ming and early Qing dynasties and has a history of more than 300 years. It is the same as Jiangsu Zhenjiang vinegar and Shanxi mature vinegar. It is brownish red in color, soft in acidity, mellow and sweet, and will not rot for a long time. When the vinegar bottle is unscrewed, it smells fragrant and sour, refreshing, and drips into the bowl and rotates for a week. The vinegar juice is evenly stained on the edge of the bowl, and it is tasted deliberately. It suddenly feels that the mouth is full of saliva, sweet and sour, and the fragrance is lingering. It is slow and sweet for a long time, and it can be called the top grade of vinegar.
Baoning vinegar is a local traditional specialty in Sichuan Province, which belongs to one of the four famous vinegars in China. Baoning vinegar, commonly known as place name, began in the first year of Changxing in the Five Dynasties Tang Dynasty when Baoning was ruled by the army, with a history of 1078. In the past 400 years, Baoning vinegar has finally formed a century-old brand famous for its bran vinegar and medicinal vinegar through continuous exploration and innovation.
Brewing characteristics of Baoning vinegar:
First, the medicated leaven used for vinegar brewing, like the distiller's leaven used in the past, is made of more than 60 kinds of traditional Chinese medicines such as Schisandra chinensis, Fructus Atractylodis, Fructus Amomi, Eucommiae Cortex, Fructus Citri Reticulatae, Jianqu, Herba Schizonepetae, and Mint, etc. as raw materials.
The second is the water used to make vinegar. Baoning vinegar is brewed with winter water from the middle stream of Jialing River flowing through the south of the city. The Jialing River, which flows through the south of the city, is green and clear, especially in winter, and Ming Che has bottomed out. Take the winter water, filter it with a sand jar and store it for later use. Vinegar made from winter water flowing in Jialing River is rich in flavor, sour and slightly sweet, and it produces saliva in the mouth and does not rot for a long time. Therefore, in the past, vinegar houses were mostly located in vinegar house street, Xiahua street and Xiaxin street along the river in the south of the city.
