Methods/Steps
Firstly, soak the dried silver fungus for about 3 hours in cold water in a clean bowl. I soaked it a day and night in advance.
Remove the roots from the soaked silver fungus, tear it into small pieces with your hands, rinse it well and drain it.
Put the fungus in a pot, fill it with cold water at once, turn on the heat and simmer, bring it to a boil over high heat, then turn to medium heat and simmer for 30 minutes.
After 30 minutes of medium heat, the gelatin of the fungus has basically come out, and then you can turn down the heat and simmer for another 20 minutes, which you can see in the picture below.
After stewing, you can sprinkle goji berries and rock sugar on top of the fungus before removing it from the fire.
