1. Pork belly is cut into small pieces. Jiangdou Gan is soaked in warm water for 2 hours. After it is soft, it is rinsed with water, cut into small pieces (of arbitrary length), sliced with ginger and chopped with onion.
2. Blanch pork belly in boiling water for 2 minutes, then take it out, rinse it off with water, and drain the water.
3. Pour a little oil into the pot and heat it with low fire. Add rock sugar and stir it until it melts, and the color turns brown, that is, caramel color.
4. Pour the cooked meat and stir-fry until the meat is colored.
5. Pour enough boiled water, light soy sauce, dark soy sauce, onion, ginger slices and aniseed, and simmer on low heat for about 1 hour.
6. 1 hour later, add the beans, stir well, continue to stew for about 20 minutes, stir fry a few times in the middle, and let the beans taste. If you feel that there is more soup, collect the juice on high fire and add appropriate amount of salt according to the taste.
