2. In a small bowl, mix together the lime juice, one tablespoon of soy sauce, vinegar, one teaspoon of cornstarch and sesame oil and set aside.
3. Remove the pork from the refrigerator. Heat the peanut oil in a large pot. Add the ginger and chili peppers and sauté for a minute. Then add the pork, carrots and peanut oil to the pan and saute for 6-8 minutes or until the pork is tender.
4. Pour in the lime juice, turn down the heat and steam until the sauce thickens, about 6-8 minutes. Remove from heat and add chili oil, scallions and peanuts to taste.
