1. Wash the round glutinous rice and soak it for seven or eight hours, until it is smashed with your nails. Soak it for two or three hours in summer.
2. Spread gauze in the steamer, pour the glutinous rice into the steamer and cover it with gauze. Don't press it hard, and steam for 30-40 minutes on medium heat until the glutinous rice is completely cooked without being pinched.

4. On the steamed glutinous rice, evenly drench the boiled water to soak it, spread the rice grains with chopsticks, and lift the gauze to drain the water.
5. Pour the rice into a clean container without water and oil, and spread it with chopsticks. If they stick together, you need to add some cool white rice until the rice grains are clear, but you can't see too much water at the bottom, and it is ok to have a little water at the bottom.
6. The glutinous rice is cooled to 30 degrees. When it is not very hot with your hands and slightly warm, pour in the sweet wine koji and stir well.
7. Pour the stirred glutinous rice into a water-free and oil-free fresh-keeping box, compact it slightly, arrange a small pit by hand, so as to observe the wine situation, and sprinkle a little distiller's yeast on the surface.
8. Cover it with plastic wrap, cover it, wrap it in a blanket and put it next to the heater for 3-4 days. One day in summer is almost the same.
9. When I opened it in three days, I found a lot of wine, and the rice grains floated on it, which showed success. The wine was light and sweet, and I liked something with a strong wine flavor, so I covered it and wrapped it in a blanket for fermentation all day.
10. After the fermented rice wine is boiled with some water and cooled, it can be stored in a water-free and oil-free bottle for at least a week. The homemade rice wine is really delicious, much more delicious than the one bought in the supermarket, and it is clean and affordable.
Tips
Steamed glutinous rice, which likes more wine, can be slightly more when mixed with cold boiled rice. Rice must be cold enough to feel only a little temperature before it can be mixed with distiller's yeast. If it exceeds 40 degrees, the distiller's yeast will be killed.
