Materials:
Fresh prawn, green pepper, Chili sauce, onion, ginger, sugar and chicken essence.
Practice:
1. For larger prawns, remove the shell from the head. If it is too small, directly cut off the top of the prawn head 1/3 with scissors, then rinse it repeatedly with clear water to ensure that it is not dirty, then drain it for later use, and slice the green pepper, onion and ginger for later use;
2. Do not put oil in the wok. After heating, put the green pepper to bake out the fragrance, and take it out when you smell the spicy taste or feel that the pepper has softened;
3. Add base oil to the oil pan, heat it, put the washed prawns into it, stir fry quickly, and when the prawns start to turn red, pour the previously fried green peppers, scallion slices and Chili sauce into the pan and mix well;
4. According to personal taste, add appropriate amount of white sugar (1 teaspoon) and chicken essence, and then serve;
In this dish, the speed of frying prawns must be fast, and fresh prawns are easily fried;
Add Chili sauce according to your own preference, or you can use soy sauce instead. If the Chili sauce at home is salty, you don't need to add salt. If the taste is biased, you can add 1 teaspoon salt when baking Chili.
