Yixian Roast Whole Cow selects calves that are more than 100 days old after birth and are slaughtered by the imam of the mosque. The cowhide is peeled off (the head is left on, and the buckle should be smaller), the internal organs are removed, and the calf is slaughtered. After cleaning, place it in a special container, add "special" condiments, and let it marinate for 24 hours. Then take out the shape, hang the "special" paste on it, spread it evenly over the whole body of the cow, and add the "special" paste. Bake in the oven for 7-8 hours. After taking it out of the oven, place it on a "special" tray, garnish it and serve it on the table.
When eating, bring pancakes, shredded green onions, coriander segments, melon sticks, cumin powder, homemade hot sauce, and homemade sweet noodle sauce, and serve it at the same time.
