Soak yuba in advance, and cut into sections with an oblique knife; Slice lettuce.
Hot pot cools oil. When the oil temperature is 60%, break the dried Chili and stir-fry until fragrant. Add lettuce slices and stir-fry until it is raw.
Stir-fry the yuba and shrimp evenly, add the water at the bottom of the small bowl, cover the lid and turn to medium heat for about 2 minutes.
Open the lid, add soy sauce and salt to taste, and stir-fry over high heat.
