1. Price distinction, the sweet potato on the market now costs 800 -1,200 yuan per ton. About 6 tons of sweet potatoes can be processed into one ton of starch. The price of sweet potato starch on the market is 3.5-4 yuan per catty. The processing fee for making sweet potato vermicelli is 1.5 yuan, so the cost price is about 5-6 yuan. The price of pure sweet potato vermicelli sold in the market is generally more than 8 yuan. However, many vermicelli on the market now only cost less than 5 yuan. This kind of vermicelli is definitely not pure sweet potato vermicelli. Of course, this method is not absolute. Because some vermicelli made with tapioca starch are now sold at high prices.
2. Taste distinction. Real sweet potatoes have the natural sweetness of sweet potatoes after being cooked (boiled in water). Vermicelli is transparent when cooked and tastes strong and refreshing. Vermicelli made from tapioca starch has a different taste. There is a feeling of constant chewing, and at the same time, there is a sense of irritation when passing through the throat;
3. Color distinction. In one case, the sweet potato vermicelli appears yellowish brown and dark; while the vermicelli processed with tapioca starch is soaked in water. It turns slightly red later, while the dry product is a bit blue.
