2. Place the chopped beef sausage in a large stockpot filled with water. Place the garlic cloves, peppercorns, thyme and bay leaf in a piece of cheesecloth. Tie the cheesecloth tightly to form a small bundle of spices.
3. Throw the package into the water. Bring a pot to a boil over medium-high heat, using a spoon to skim off any foam that may have risen to the surface.
4. Turn the heat down. Let the pot cook for 2 to 3 hours, or until the curls are tender.
