Authentic Northeastern pickled cabbage stew recipe

Recipe for authentic Northeastern pickled cabbage stew:

1. Wash the pork belly and put it into the pot under cold water, add ginger slices, Sichuan peppercorns and aniseed. Add cooking wine and bring to a boil over low heat.

2. Rinse the sauerkraut twice with water and squeeze it dry.

3. Heat the pan with cold oil, add onion, ginger and garlic and saute until fragrant. Add the sauerkraut and stir-fry over medium heat until the edges of the sauerkraut are lightly colored. It’s good if the sauerkraut can be shaken open without turning into lumps.

4. Pour into the rice cooker, place the pork belly on top of the sauerkraut, and pour in boiling water to cover the pork belly.

5. After cooking, cut the pork belly into thin slices and mix with the sauerkraut. Add an appropriate amount of thirteen spices, a spoonful of sugar and oyster sauce.
