Dungeness fish killed and gutted, gills and scales removed, rubbed all over with salt, sprinkled with pepper, and ginger slices in the guts to remove the fishy smell

Put a spoon underneath the fish body to cushion it up, and steam the fish in a steamer for about 10 minutes until it is fully cooked

Remove the spoon, and pour the water out of the fish to drain it away

Lay the fish with green onions, drizzle with steamed soy sauce, and pour the cooking oil on top.

Spread the scallions on the fish, drizzle with the steamed soy sauce, heat the cooking oil and pour it over the scallions to give them a scallion aroma!
