Passion fruit, lemon and spicy phoenix claws
Practice:
1, phoenix claws washed, cut off the nails, chopped in half, into a pot of cold water blanching, fish out and wash.
2, change a pot of water, put 2 spoons of cooking wine and ginger, boil the water and cook for 5 minutes, fish out and soak in ice water, standby.
*Note: The chicken claws can be soaked in ice water to make it crunchy, and if you like a softer texture, you can extend the cooking time to about 10 minutes.
3. Take an empty bowl, put in the cilantro segments, small pepper rings, garlic and lemon slices (keep a moderate amount of lemon slices for later use), then pour in 2 tablespoons of soy sauce, 2 tablespoons of vinegar, 1 tablespoon of sugar, a pinch of salt, a pinch of sesame oil, and the flesh of 1 passion fruit, and mix well.
4: Use a slotted spoon to lift out the phoenix claws soaked in ice water, drain and add to the sauce, stirring well
5: Finally, spread the lemon slices over the top, cover with plastic wrap, and refrigerate for 6 hours or more.
