1, tofu diet
1. Pipa tofu
Ingredients: south tofu 150g, lean minced pork 100g, 2 eggs, starch, salt water, cooking wine, pepper, monosodium glutamate, onion ginger, shredded ham and water-soaked mushrooms, red wine 100g, and soup stock 500g.
Method: Blanch the tofu in boiling water and mash it, then mash it with minced meat, egg juice, starch, salt water, cooking wine, pepper and monosodium glutamate until it becomes thick. Add onion, ginger and water and mix well, then add a little sesame oil and mix well. Use 10 spoon, a little oil per spoon, put tofu paste, and put shredded ham and shredded mushrooms on it. Boil the stock, add red wine, and pour it on the pipa tofu when it boils again.
2. Red and white radish tofu soup
Ingredients: radish 100g, carrot 50g, appropriate amount of mushrooms, half a piece of tofu, 60g of wheat flour, 2 cups of chicken soup, cooking wine and soy sauce 1 spoon, and half a miso 1 spoon.
Methods: White radish, carrot and mushroom were cut into small pieces. Add wheat flour, chicken soup and tofu to the soup bowl, crush and mix with a spoon, and make tofu balls. Add chicken soup, radish, carrot and mushroom, bring to a boil, add wine and soy sauce, and cook for 3-4 minutes on medium heat. Add tofu balls and cook for a while until the ingredients float on the noodle soup.
3. Gold and silver tofu
Ingredients: bean curd 150g, oil bean curd 100g, straw mushroom 20 (canned), onion 2, water 100g, stock (powder) 15g, soy sauce 15g, sugar 4g, onion oil.
Method: Cut tofu and oily tofu into 2cm square pieces, add water to the pot, and add soup, tofu, straw mushroom, soy sauce and sugar. After boiling, cook for about 10 minutes, thicken with starch paste, put in a bowl, sprinkle with onion oil around and sprinkle with onions on the surface.
4. Bitter gourd tofu
Ingredients: tofu 50- 100g, bitter gourd 1 strip, minced meat 100g, a little onion and a little soy sauce.
Method: Wash bitter gourd, cut into pieces and hollowed out; Put all the chopped tofu, minced meat, a small amount of onion and soy sauce into a bowl, mix and stir with a spoon, put the stirred ingredients into the hollowed-out bitter gourd, and then steam in an electric rice cooker for about 1 hour to 1 hour for 30 minutes.
5. Mapo tofu
Ingredients: tofu 200g, beef stuffing 100g, green garlic 15g, bean paste 20g, lobster sauce 10g, ginger 10g, Chili powder 0.5g, pepper powder 1.5g and soy sauce/kloc.
Method: Cut tofu into 2cm square pieces, soak it in boiling water with a little salt to remove the beany smell, take it out and soak it in clear water, chop lobster sauce and bean paste, cut green garlic into sections, cut ginger into sections, heat a wok, add oil, stir-fry beef stuffing until golden brown, and add bean paste, lobster sauce, Jiang Mo and Chili powder.
6.tofu risotto
Ingredients: a piece of tofu, 150g cooked rice, 1 4 onion,/kloc-0 canned tuna, a little bacon, asparagus, butter, 1 tablespoon salad oil, 1 cup soybean milk, a little salt, pepper and cheese powder.
Methods: Onion and bacon were shredded and asparagus was sliced. Pour some salad oil into a hot pot, stir-fry onions and bacon with low heat, and pour canned tuna and asparagus into the pot. Cook for a while until the oil is absorbed by the ingredients. Add soybean milk and tofu as soup, and simmer for 3-4 minutes. After adding a little water, add rice and cook together. When the soup is almost absorbed, add salt and pepper to taste, eat and sprinkle with powdered cheese.
2. Stinky tofu practice
1. Take the tofu out of the box and drain it. Take some kitchen paper and wrap the tofu layer by layer.
2. Press a flat object on the tofu (I use the bottom of the cake mold), and then press a heavy object (I fill the bowl with water). After about half an hour, the tofu will come out, the height will be reduced, and the water will satisfy you according to your personal preference.
3. Take out the soaked tofu and cut it into1.5-2cm thick slices.
4. Put it in a clean oil-free container, loosely cover it with tin foil, don't seal it, don't touch tofu with tin foil, or buckle a plate.
5. Just wait 1-3 days, depending on the room temperature and the degree of fermentation you like. As shown in the picture, I left it at room temperature of about 25 degrees for 2 days.
6. Pour the fermented tofu out of the container, evenly sprinkle with high-alcohol liquor, chopped pepper, sesame oil and appropriate amount of salt, put it in a steamer, and boil the water for 20 minutes. Sprinkle chopped green onion after cooking.
7. If you want to smell better, you can burn a little hot oil and pour it on chopped green onion. Don't bother, eat.
8. The fried version is to put the fermented stinky tofu into an oil pan and fry it on medium heat until both sides are golden. Use your favorite dipping sauce. It is recommended to use soy sauce+vinegar+chopped pepper+sesame oil+chopped green onion.
