Pair the ribs and peas according to the number of diners and taste. For my portion, I estimate a meal for 4-5 people.

Pot with cold water, under the ribs blanching. I myself like cold water in the pot, because I forgot to read somewhere: if you wait for the water to boil and then put the pot, the surface of the meat will be the first to cook, but the inside of the rendering of an undercooked state.
