Three kinds of protein
Vanilla essence 1/2 teaspoons (3 ml)
2 tablespoons (30g) of sugar.
Exercise:
1) Separate the egg white from the yolk. Don't use egg yolk, put it in a fresh-keeping box, keep it in the refrigerator, and use it for other dishes. Beat the egg whites evenly with chopsticks.
2) After the milk is boiled, pour it into a small bowl and naturally cool it to room temperature. After the milk cools, slowly pour the milk back into the pot, so as not to break or slip the skin. When finished, there will be a layer of milk skin attached to the bottom of the bowl.
3) Pour in the beaten egg white, then pour in the vanilla extract (unnecessary), add the white sugar and stir well. Put a strainer in a small bowl, slowly pour the milk into the bowl, then cover it with plastic wrap and put it into the steamer.
4) Put the pot into cold water, boil the water, steam it for 15 minutes, and take it out after turning off the fire. After stewing for 2 minutes, open the lid and plastic wrap, add honey beans and serve.
Super wordy:
* * Never use a big bowl to save trouble, otherwise the inside will be thin after steaming for a long time, the inside of the bowl will not be shaped, and the taste of the bowl edge will be old.
* * Use whole milk instead of skim milk, otherwise the milk skin will not come out. If the eggs are small, you'd better use three. I used to make them with 1 big bag of milk and two kinds of proteins, which was not very successful.
* * Be sure to cool the milk before putting it back into the pot and adding protein, otherwise the hot milk will be blocked by protein. Be sure to pour milk slowly to prevent the skin from being damaged or falling off. However, don't be afraid, even if the milk skin is gone, this dessert will have no effect no matter how delicious it is.
* * Cover with a layer of plastic wrap and steam to prevent the surface of double skin milk from becoming an ugly honeycomb. This method is very suitable for beginners.
