Red onion 150g Cooking oil 200ml Dark soy sauce 100ml Fresh soy sauce 100ml Sugar 50g Shallot 2g Noodles 200g
Red onion washed and peeled, chopped into small dices or crushed into dices directly into a mixing cup.
Add the diced shallots to the warm oil in a hot pan and simmer slowly over a low heat until lightly browned.
Add the soy sauce, soy sauce and sugar to the pot and stir to combine.
Reduce the heat to medium and simmer until bubbles form in the pot (see the picture for details, the bubbles need to rise higher), then lower the heat to low and simmer for 30 minutes or until dark brown. Remember to stir and adjust the heat from time to time to prevent scorching.
In advance, bring a saucepan of water to a boil, then add the noodles and cook for about 1 minute.
Top with simmering scallion oil, add small green onions and toss quickly to coat.
