The blending method is to pour the drinks in the formula directly into the cup in turn according to the weight without stirring. This method is suitable for two kinds of drinks that are easily mixed, and it is more applied to the modulation of rainbow wine (coffee).
Rainbow wine has three colors, four colors, five colors and even six colors. Rainbow wine is wine with different colors, poured into a cup, and the colors are not confused with each other, with distinct layers and bright colors, like rainbows after rain.
The key to the preparation of rainbow wine is to accurately grasp the sugar content of various wines. The higher the sugar content, the greater its proportion, and vice versa. When preparing rainbow wine, it is advisable to choose wines with different sugar contents and different colors.
When preparing, pour the heavier ones first, the smaller ones later, and the sugar-free wine last. If you don't pour the wine in sequence, or if the sugar content of the two colors of wine is very different, it will cause them to be mixed together and can't make rainbow wine.
Do not pour the wine directly into the cup during operation. Move lightly, slowly, and avoid shaking. In order to reduce the impulse when pouring wine and prevent the color layers from melting, a metal teaspoon can be inserted obliquely into the cup, with the back of the teaspoon facing upward, and the wine is poured on the back of the teaspoon, so that the wine can slowly flow down from the inner wall of the cup.
The prepared rainbow wine should not be kept for a long time, otherwise the sugar in the wine will dissolve easily after a long time, which will make the wine color penetrate and blend with each other.
When preparing rainbow wine, it is also necessary to master that the amount of alcohol injected into each color should be equal, and it looks even and distinct, and the wine color is bright. In order to increase interest, we can ignite the rainbow wine and burn it into a flame, which is called Guanghui Pushi Coffee, to increase the joyful and interesting atmosphere.
When making rainbow wine with domestic wine, there are not many varieties of colored wine with various sugars at present, so it brings some difficulties. The alternative is to make sweet wine with various colors by adding syrup and food coloring, which can also make domestic rainbow wine.
Second, the reconciliation method (To Stir)
There are two kinds of blending methods: blending and ice filtering (stir &; Strain)
First, add ice cubes into a Mixing Glass, then pour the wine into the mixing glass according to the formula, hold the cup in your left hand and the bar spoon in your right hand, and put the spoon between your middle finger and ring finger, with your thumb and forefinger sticking to the upper part of the spoon. Along the inside of the mixing glass, quickly rotate and stir clockwise for about 10 to 15 revolutions, so that the wine is evenly cooled. The stirring time should not be too short or too long, and it should be mastered.
When pouring wine, hold the cup in your left hand, and filter the ice cubes with an ice Strainer in your right hand. If you don't have an ice strainer at hand, you can hold the cup in your left hand and block the ice cubes with a long spoon in your right hand and filter the wine into the glass. This method is called "blending and ice filtering", and drinks prepared by this method generally use cocktail glasses, such as Americano. Some wines are simply "blended" when they are brewed by this method without filtering ice.
Third, shake method (To Shake)
When some ingredients (sugar, cream, eggs, fruit juice) can't be stably mixed with the base wine, a hand-cranked flask is used to mix the wine. The specific method is: add ice cubes first, and then put the necessary materials into the pot in order according to the formula requirements. Usually, the pot can be filled with 60% materials, and then the lid and ice filter are installed and can be shaken. When holding the pot, the thumb of the right hand tightly presses the lid in front of you, and the other fingers hold the pot body. The fingertip of the middle finger of the left hand touches the bottom of the pot, and the thumb presses the ice filter, while the other fingers surround the pot body, and the fingertips gently hold the jug. When shaking, hold the shaker correctly, so that the lid leans to the chest. Starting with this posture, swing it obliquely upward to the height close to the eyes, and then return to the original position; Swing it obliquely downward, then return to the original position, and so on until the materials are mixed together. When filtering wine, hold the pot with your left hand, open the top cover of the pot with your right hand, and filter the wine into a cocktail glass. The wine is filtered out through the small hole in the lid, and the ice cubes are left in the pot. In practical work, it is also allowed to exchange the left and right hands or use a single hand-cranked pot.
Shake well for a long time. If the ice cubes melt into water, the alcohol content will be reduced and the taste will be light. Just shake it until the wine gets cold, that is, when frost appears outside the metal shaker.
In the blender, you can't add gas-containing materials such as soda to avoid foaming. For materials that are not easy to mix, such as cream and eggs, shake them well.
Cocktails or champagne glasses, such as Pink Lady and Margarita, are often used in cocktails prepared in this way.
Fourth, the stirring method (To Blend)
This method is suitable for drinks mixed with base wine and some solid objects (for example, banana Dachley Banana Daiquiri). The electric mixer can also replace the manual mixer. Mixing wine by electric method is fast and labor-saving, but the taste of the drink is not as soft as that of the hand-cranked hip flask.
