Bitter melon can clear away heat and detoxify, but because of its bitter taste, children don’t like it very much. Today I made a stuffed bitter melon dish, which was very popular.
Material
Ingredients: 2 bitter melons, 200g front leg meat, 4 shiitake mushrooms;
Accessories: appropriate amount of oil, appropriate amount of salt, a little light soy sauce, a little cornstarch, 1 eggs

Two fresh pearl bitter melons.

Cut the bitter melon into sections and remove the core.

Soak in salt water to remove some of the bitterness.

Prepare a piece of fat front leg meat, chop the meat into mince, chop the mushrooms into mince, stir well, add salt, light soy sauce, cornstarch, eggs, stir.

Pour the prepared meat paste into the bitter melon.

Take a small bowl, put a little light soy sauce, a little cornstarch, and a little water to make a juice.

Heat the pan, add oil and add bitter melon.

Tips
Soak the bitter melon in salt water first to remove some of the bitter taste. Adding an egg to the minced meat makes the meat more tender.
