Pig intestines, sheep intestines or cow intestines can be used to make casings. Pig intestines are the most commonly used. The processing methods of pig casings, sheep casings or beef casings are all the same. Today we will introduce the methods and essentials suitable for home-made casings and teach you how to make high-quality casings at home.
1. Soaking: Turn over the fresh small intestine you bought, wash the dirt on it, and then soak it in clean water for 18 to 24 hours.
2. Scrape the intestines: Place a wooden board diagonally in a large basin, and prepare a bladeless scraper or an edged bamboo board. Take out the soaked small intestine and place it on a wooden board. Use a scraper or bamboo board to scrape off the grease and unused parts of the inner wall of the small intestine until the small intestine is scraped into a transparent film. A pair of pig small intestines after scraping is only about 1 bowl.
Since the wooden board is placed diagonally in the big basin, the scraped grease and other things will flow into the big basin, and there will be no dirt everywhere. In addition, pay attention to using even force when scraping, and be careful not to scratch the intestines.
3. Rinse: After the intestines are scraped, you can rinse them. Before rinsing, rub them with fine salt several times. This will easily wash away the dirt and remove the odor, and then rinse them clean. Repeat this several times. Second-rate.
4. Filling with water: Put one end of the intestines on the faucet, fill it with water, and check if there is any break. If there is any, cut it from there to prevent it from leaking out from the break when filling the meat. , and finally wash it.
5. Cleaning: Turn the small intestine over again, and remove the ruptured intestinal membrane attached to the front.
After completing this step, the casing is ready. If there is prepared meat filling, it can be filled directly. If the prepared casings are not used temporarily, they can also be soaked in salt water and refrigerated for two or three days before use.
Supplementary instructions:
1. There are three types of special intestine scrapers: bamboo, rubber and iron. When making at home, you can choose an edgeless scraper or a ribbed scraper. The bamboo board should be about three inches long and two inches wide. The blade should not be sharp but should be flush.
2. The finished casings on the market are all salted casings or dry casings, which are made by salting or air-drying the above-mentioned casings. These professional processing methods are not suitable for home use. No more introduction.
3. Soak the prepared casings in salt water for more than 12 hours before use, which can enhance the elasticity of the casings.
