Step 1
When buying new garlic, pinch it with your hands. It's hard and good. Try to pick full garlic, not too small garlic, too much skin.
Second step
Peel the fresh garlic, preferably leaving one or two layers. Cut off the garlic tail, cut off the garlic root, wash it, soak it in salt water for one night, or clean water, all for cleaning.
Third step
Boil sugar, soy sauce and vinegar in a pot and let it cool for later use. Try adding sugar or vinegar according to your personal taste. Those who like acid can use aged vinegar, rice vinegar and white vinegar. Zhen Ji soy sauce is light in color, so I use Zhen Ji, and other soy sauces can also be used; Vinegar alone is a little sweet. These are personal preferences.
Fourth step
Wipe the soaked garlic clean, dry it as much as possible, put it in a container, and pour the cool soup into the container until the garlic is not eaten.
