Under the careful cultivation of human beings, watermelon gradually changed from white pulp to red pulp. However, red is not the only color of pulp. There are many watermelons with yellow and orange flesh now. The most common variety of yellow flesh is Texiaofeng, which is slightly larger than wild watermelon, and the sweetness of yellow flesh is not lower than that of red flesh watermelon.
Watermelon varieties with white flesh, such as the famous "Sanbai" watermelon in northern China, are not only white in flesh, but also white in skin and seeds, which is quite delicious. There is also a kind of "melon" or "seed melon" which is also white pulp, but its sweetness is very low, so people generally only eat the melon seeds inside.
