Ingredients: chicken head rice 100g, shrimp 200g, mung bean 50g, 2 egg whites, a little raw flour, a little cooking wine and a little refined salt.
1. Frozen shrimp, thawed, washed and drained.
2. Add a proper amount of salt, raw flour, cooking wine, and egg whites of 2 eggs, and marinate the shrimps to keep them fresh and tender after frying.
3. Blanch the chicken's head rice and green beans in boiling water, then drain and dry for later use.
4. Put a proper amount of oil in the pot and fry the shrimp until it is 80% mature. Please send it quickly and fry it, leaving a little base oil in the pot.
5. Stir-fry chicken head rice and green beans with base oil in the pot.
6. Combine the two fires and stir fry quickly for 5 minutes.

Note: 1. The blanching time of chicken head rice should not be too long.
