①Processing river shrimp

②Measure the batter
Take a large bowl, pour in the appropriate amount of self-rising flour, add water to the self-rising flour into a paste, then add the appropriate amount of salt to taste, pour in the prepared shrimp, and the batter together with the mixing standby.
③Shrimp Cake
Pour a proper amount of cooking oil into the pan, and when the oil is heated to 60 or 70 percent, use a dry spatula to scoop up a little bit of the oil and drizzle it on the side of the pan, so that the sides of the pan are coated with a little bit of oil, and then you can start to fry the shrimp cake.
Use a tablespoon to scoop out the right amount of river prawns and batter, gently pour it out along the sides of the pan, and then spread the prawns out evenly and flatly.
When the prawns and batter have solidified and the cakes are slightly set, spoon a little hot oil into the pan with a spatula and pour it down the sides of the pan around the cakes, allowing the cakes to slide naturally into the hot oil.
Continue frying the shrimp cakes over medium heat until they turn golden brown, then pick them up with chopsticks and place them on a plate.
4Frying
After all the shrimp crackers are fried, turn the gas burner on high heat, and when the oil temperature rises, put the previously fried shrimp crackers into the hot oil, and quickly fry them for a few seconds before lifting them out, so that the crackers become even more crispy.
