Ingredients: 5kg fresh white garlic, 500g salt, 100g sugar, 10kg water, appropriate amount of vinegar
Preparation method: 1. Peeling and stem removal: First remove the garlic stems and remove the two layers of skin.
2. Soaking: Soak the garlic in clean water for 1 weeks, change the water once a day, and pour the jar once to extract the spicy flavor.
3. Drain: Remove the soaked garlic and drain the water.
4. Sun-drying: Drain the water from the garlic and dry it in the sun until the skin becomes wrinkled.
5. Vinegar pickling: Mix vinegar, salt and sugar together with water, bring to a boil, pour it into a vat while it is hot, seal it, and pickle until it is submerged. It usually takes about 40 days to marinate.
