There is a folk dish in Zhenjiang called Huanggu. There is an anecdote about the origin of this dish.
It is said that during the Qing Dynasty, Emperor Qianlong privately searched for his father in Jiangnan. One day I went to Nanxiang, Zhenjiang at noon, feeling thirsty and hungry. Looking forward and back, I saw a village with a thatched cottage beside it, and white smoke curled up on the chimney. I was overjoyed and decided to borrow this family to rest and find something to eat. As soon as I entered the door, I found that this family was very poor and had little decoration. Only the peasant woman is at home. Gan Long explained his purpose to her. The peasant woman was surprised and worried when she saw a well-dressed official at home. Surprisingly, this partial village actually came to the distinguished guests; What worries me is that the family is really poor and there are few ways to entertain guests. The farmers here are very hospitable, so the peasant woman invited guests into the house to wash their faces and drink tea. The family lived on firewood, and the peasant woman looked around the house, only two pieces of tofu brought back by the man in the morning. She had to go to the field and pull out a handful of spinach, cut tofu into small pieces, fry it in soybean oil until both sides are yellow, and then put it in spinach to burn together. After that, she filled a big bowl and served it to the guests. Ganlong was born in the palace and ate delicacies every day. He was eating farm food there. He was hungry and thought it was delicious. It didn't take long for a big bowl of tofu to be finished. Gan Long thought: My appetite has never been better. Although I am the king of a country, when have I ever enjoyed this kind of food? But I want to know what this dish is made of. So, what delicacies did that peasant woman eat just now? When the peasant woman asked, she laughed. What are the delicious foods? It's just ordinary home cooking. Tofu is fried, golden outside, white jade inside, spinach leaves, green and red roots, like a parrot's mouth. Since the guest asks such a question, you might as well tell him a nice dish name. He casually replied: "This dish is' white jade board with gold, red mouth and green Ying Ge'." Hearing this, Gan Long was very happy. Send a folding fan as a reward when you leave, and say that if there is an emergency at home, take this fan out and you can save the day. Hearing this, the peasant woman did not believe that the paper fan would be of any use. But I saw the calligraphy and painting on it was very interesting, so I hung it on the wall and left it alone.
One day, the farmer's husband went to the street to sell firewood and didn't go home for dinner after noon. The peasant woman was impatient and asked around, only to know that the man was selling firewood in the street, one end of the firewood pole slipped, and a group of people were accidentally crushed to death by a pole, and they were taken to the yamen for interrogation and conviction. Hearing this, the peasant woman became impatient and had no idea. She turned straight in the room and didn't know what to do. Look up sharply. When I saw the folding fan, I thought of what the guests said when they left. Whether it is useful or not, try it first. She went to the yamen with a folding fan. But after all, the peasant woman had never seen such a big world and dared not look up. She put a fan on her head to cover half her face and walked carefully to class. The magistrate was amazed when he saw it. This is the handwriting of the holy family! Kneel down. When he knelt down, the whole hall knelt down. The peasant woman didn't know exactly, so the magistrate asked, "Where is the holy land?" The peasant woman knows that the distinguished guest is the present emperor. The page asked, "What can I do for my aunt (the emperor's sister)?" After the peasant woman explained her husband's story, the magistrate quickly released the farmer and treated him with courtesy. From then on, people called this village "Attached Mazhuang" and spinach tofu soup "Huanggu Cuisine". Fumazhuang is still here today.
Besides, after Qianlong returned to Beijing, one day he suddenly remembered this dish in the palace, which was made by a chef. I don't know how many delicious dishes I got from the royal chef in the palace, but I have never heard of this dish. The first chef made it with his brain. No, he was killed. The second one was killed again, killing several chefs in a row. This aroused the prime minister's vigilance. How many cooks will be killed if we don't solve it quickly! So, hurry to court and ask Gan Long where he has eaten this dish. When asked why, the Prime Minister hurried through the post office, took the peasant woman to Beijing overnight, and served the dish as it was. Gan Long saw it. Turn anger into joy, that's what I want to eat. But after eating it, Gan Long felt that it was not as delicious as before, and asked why. The prime minister said, "Your Majesty feels delicious when he is hungry, but now he feels tasteless when he is not hungry." Gan Long nodded and said, "That's true."
Up to now, among the people in Zhenjiang, as long as people say, "Gold, silver and white jade board, red mouth and green Ying Ge." You'll know it's spinach tofu soup. Because it is vegetarian soup, fresh spinach, white and tender tofu, delicious and easy to cook, it has become a favorite home-cooked dish.
