The method of making fried tofu fluffy and delicious is as follows:
1. Cut the fried tofu into moderately sized pieces.
2. Prepare a large bowl, add appropriate amount of all-purpose flour, baking soda and salt, stir evenly.
3. Prepare another bowl, beat the eggs, add appropriate amount of water and mix well.
4. Heat the oil pan until it is 70% hot. Coat the tofu cubes in flour one by one, then dip them in the egg liquid. Repeat twice so that the surface is evenly covered with a layer of milky yellow egg liquid.
5. Put the batter-wrapped tofu puffs into the oil pan, fry over high heat for 2-3 minutes until golden brown, remove and drain the oil.
